Stir Fried or Grilled Mexican Vegetables

Great served with the Mexican rice, Mexican beans, Mexican tortillas, chili sauce and salsa. Also great as a side dish to Mexican entrees such as tacos, enchiladas, burritos, etc.


  • 2 onions
  • 1 zucchini
  • 1 each red and yellow bell peppers (you can also add another vegetable if you wish)
  • oregano to taste
  • 2 pods garlic (optional)


Chop all the veggies into bite size pieces. Toss into a non-stick wok with a medium – high flame. Put the onions in first, then garlic and oregano and then all the rest of the vegetables. Cook till the vegetables are done but still crunchy.
