Whole Wheat Vegan Brownies

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1-1/4 cups date paste
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups chocolate chips (or finely cut non dairy cooking chocolate) (optional)
  • 1/4 cup chopped walnuts
  • 1/3 cup cashew milk plus a little extra cashew milk if the mixture is too difficult to mix
  • 1 tbsp vanilla extract

Method

Preheat oven to 350 degrees F. In large bowl, whisk together flour, cocoa powder, baking powder, salt, walnuts and chocolate chips (if using). In a blender, blend the cashew milk, date paste and vanilla. Add blended mixture to the flour mixture in the large bowl and stir until just combined. Batter will be thick. Spread out the batter evenly into an 8-inch square baking dish lined with parchment paper. Bake for 35 minutes or until toothpick inserted in the middle comes out clean.
