The Maiyurma Cake
Ingredients
• 5 bananas, kept in the freezer for 2 hours before using them
• 4 mangoes, kept in the freezer for 2 hours before using them
• 3 pomegranates
• 500 gm raisins
• 500 gm shelled walnuts
• 2 tsp cinnamon
• 20 dates
• 4 tbsp lime juice
Method
For the base:
Soak the raisins for half an hour.
Blend the walnuts, then add the soaked raisins, cinnamon and make a paste.
Divide this paste in 3 equal parts, put in 3 bowls and set aside.
For the filling:
Blend the half-frozen bananas with 1 tbsp lime juice together with 2 of the half-frozen mangoes. Divide the fruit realm in two parts, put in 2 bowls and set aside in the freezer. Cut 1 mango in tiny squares of 3 mm and put aside. Open 2 pomegranates and take out the bits and put these aside.
For the frosting:
Blend the dates with the 3 tbsp lime juice and set aside in the freezer. Cut 1 mango in long thin slices and set aside for decoration purposes.
Open 1 pomegranate and take out the bits and put these aside for decoration purposes.
Mounting the cake:
Use a springform mold (we will use a rectangular mold 30×20 cm, about 3 cm high)
With one of the 3 paste parts, spread a layer of it on the mould.
With one of the 2 fruit realm parts, spread a layer on top of the paste layer.
Put the tiny mango squares all over the surface of the fruit realm.
Freeze for 15 minutes.
With the 2nd part of the paste, place a layer on the fruit realm/mango squares layer.
With the 3rd fruit realm part, spread a layer on top of the paste layer.
Put the pomegranate bits all over the surface of the fruit realm, not too many.
Freeze for 15 minutes.
With the 3rd part of the paste, place a layer on the fruit realm/pomegranate layer.
Freeze for 20 minutes.
Put on the frosting and decorate with the pomegranate bits and the mango slices, making the Mayurma symbol and maybe writing something like “spreading sweet happiness”…
Maintaining and serving:
Keep in the refrigerator and then freeze for 2 hours before serving.

These quantities are enough for about 30/35 people = 3.5 kg.
