Ridge Gourd(Thurai) Chutney

Ingredients

  • 200 gm ridge gourd (medium & tender)
  • 5 green chilies
  • 50 gm coconut flakes
  • 1 small bunch coriander leaves
  • a gooseberry sized ball of tamarind
  • 1 big onion
  • 8 small garlic cloves
  • 1 small piece ginger
  • 2 tbsp bengal gram
  • salt to taste

For Tempering

  • 2 sprigs curry leaves
  • 1 ½ tsp urad dal
  • 1 tsp mustard seeds
  • 1 tsp asafoetida

Method

Peel and discard the sharp edges of ridge gourd skin (only the sharp edges the rest of the peel remains). Cut the ridge into pieces.

Heat a kadhai and sauté the ridge gourd till it becomes tender. Cook the bengal gram till well done. Grind all ingredients together to a coarse chutney consistency.

Roast ingredients for tempering and pour over chutney.
