Raw Chocolate Cake

Ingredients for the cake

  • 3 cups dry walnuts
  • 2/3 cup unsweetened cacao powder
  • 1/4 tsp sea salt
  • 1 cup pitted dates

Ingredients for the frosting

  • 1/2 cup  date paste
  • 1/2 cup ripe avocado flesh (from about 1 medium avocado)
  • 1/3 cup cacao powder

Method

For the cake

Combine the walnuts, cacao powder and salt in the food processor until mixed. Add the dates. Shape into two stack-able cakes of desired shape and set aside.

To make the frosting

Add the date paste in the food processor. Add the avocado and process until smooth. Add the cacao powder and process until smooth. You may need to add a little bit of water if the mixture is not smooth enough.
To serve, frost the top of one of the cakes with half the frosting. Stack the second cake on top and frost the top and the sides. Serve immediately, or store in the refrigerator for a couple of hours to firm up.
