Open Faced Sandwiches
1. Ingredients
- 4 tbsp raw cashew cheese
- One small piece ginger
- Pinch of salt
- Pinch of black pepper powder
- 10 mint leaves
- 2 slices of whole wheat bread
- Slices of tomato for garnishing
Method
Mix the first 5 ingredients into a spread. Spread the vegan cheese spread on two bread slices and cut each into 9 pieces. Garnish with tomato slices.
2. Ingredients
- 2 tbsp peanut butter
- 2 tbsp coriander mint chutney
- 2 slices of whole wheat bread
- Slices of cucumber for garnishing
Method
Apply one layer of butter and one layer of chutney on each slice of bread. Cover. Cut each piece into nine pieces. Cover with cucumber slices.
3. Ingredients
- ¼ cup cashew mayonnaise
- 1 cup cabbage shredded
- 1 piece ginger shredded
- Salt to taste
- 1 tbsp coriander chopped
- 2 slices of whole wheat bread
Method
Mix all the ingredients.
Cover both the slices of bread with this mixture. Cut into 9 pieces.
Cover with small slice of cabbage for decoration.
Variation
Use lentil bread instead of whole wheat bread
A very healthy and delicious snack to serve your appetite.
