Fresh Corn Bhel

Ingredients

  • ½ cup steamed american corn kernels
  • 1/3 cup finely chopped onions
  • ¼ cup finely chopped boiled potatoes
  • 2 tbsp finely chopped capsicum (yellow/green)
  • 1/3 cup chopped cucumber
  • ¼ cup chopped tomatoes
  • 1 tbsp finely chopped coriander
  • 2 tbsp pomegranate
  • ½ tbsp date – tamarind chutney 
  • ½ tbsp spicy chutney (made of mint, green chilies, lime juice, salt and roasted split chana daal)
  • a pinch of roasted cumin (jeera)
  • rock salt to taste
  • chopped coriander for garnish

Method

Mix all the ingredients in a bowl to taste. Garnish just before serving. This recipe is not only easy and tasty but it’s very healthy as well.
