Cauliflower Rice

Ingredients

  • 5 cups cauliflower florets
  • 1 cup raw cashews
  • 1 tsp sea salt
  • 5 cups water

Method

In a large bowl cover the cauliflower florets with the boiling water. Let sit for 3 minutes, then drain and set aside. In a food processor combine the cashews and sea salt. Pulse to achieve a fine meal. Add the cauliflower and pulse to create a “rice-like” texture. Do not over process.
