Bhaidku (Spicy Porridge)
Bhaidku is Gujarati word for spicy porridge. It can be made with many different grains. Bajri bhaidku is popular so the ready-made flour is often available. We can prepare various kinds of combinations. This one is made from mixed grains.
Ingredients
For Flour
- 2 cups rice
- ½ cup bajra
- ½ cup jawar
- ½ cup mung dal
- ½ cup muth/mutki /moth
For Bhaidku
- 1 cup water
- a few ajwain seeds
- a pinch asafoetida (hing)
- peanut buttermilk
- sea salt to taste
- ginger chili paste (optional)
- curry leaves
- lemon juice to taste
- black pepper to taste
- coriander for garnish
Method
For Flour
All the above ingredients are put in a dry grinder and made into a coarse flour which can be stored.
For Bhaidku
Take 3 tbsp of flour, roast for a few minutes. Add 1 cup water and a few ajwain seeds to taste. Cook for about 7 minutes. When cooked add peanut buttermilk to get the consistency of a porridge. Mix well. Add sea salt and ginger, chili paste if desired, asafoetida, a few curry leaves, lemon juice and black pepper. Cook for 3 more minutes. Garnish with chopped coriander leaves. Makes a good breakfast.
Variation
Add your own flavourings – coriander seeds, cumin seeds, turmeric & vegetables like carrots, onion, potatoes, peas, etc.
